So good...


Lori! Here's the recipe you asked for. Michael thought it would be better if the strawberries were more of a syrup-ee mix, but I like it this way.



Strawberry Shortcake
2 cups flour
4 tsp. baking powder
pinch of salt
1 cup sugar
1 cup stick margarine
1 qt. fresh strawberries, plus sugar to taste
vanilla ice cream
whipped cream
1 cup milk
1/4 cup sugar for topping

Preheat oven to 350. Spray a 9x9 pan with non-stick cooking spray. Sift all the dry ingredients together into a medium bowl. Cut margarine into tiny slices. Using a pastry blender, cut margarine into the dry ingredients until it resembles a coarse meal. Slowly add the milk, mixing it by hand with a wooden spoon until the batter is well blended. Spread batter into your prepared pan. Sprinkle 1/4 cup sugar on the top. Bake for 30 minutes.
Wash and hull the strawberries. Slice strawberries into 1/4 inch thick pieces. If needed add sugar to sweeten.
Cut shortcake into 3 inch squares. Slice each shortcake open and place in individual bowls. Spoon sweetened srawberries on top. Add a scoop of vanilla ice cream and top with favorite whipped cream. Enjoy!
